Our story begins in the Highlands of Jalisco, where we grow 100% Blue Weber agave—renowned for its sweetness, complexity, and vibrant character. Why Blue Weber? It’s the gold standard for premium tequila, and we’re uncompromising about using only the best.

Agave cultivation isn’t just farming—it’s a commitment to the land and to the future. Our agave thrives in warm, dry, well-draining soil with plenty of sunshine. It’s a slow process, taking 6 to 8 years for each plant to reach full maturity, but that’s time well spent. Our skilled jimadores hand-select each plant at its peak, ensuring optimal sugar content and flavor.

This allows us to control quality from the very start and to support our local community every step of the way. From Harvest to Oven – The Start of the Tequila Making Process

Slow Roasting for Flavor

Once harvested, our agave piñas are slow-roasted in traditional brick ovens—hornos—for 52 to 56 hours. This gentle, patient process transforms the agave’s natural starches into rich, fermentable sugars, developing a caramelized sweetness and deepening the flavors that define our tequila.

Why stick with tradition? Because it makes all the difference. Modern methods like autoclaves are faster, but we believe that slow roasting in hornos (ovens) unlocks a complexity and character you just can’t rush.

The Tahona Difference – Crushing for Complexity

100% Tahona-Crushed: Tradition in Every Drop

Tahona. It’s Spanish for delicious. At Suerte, we’re among only 1% of tequila brands labeled TAHONA. To be 100% Tahona means that every piña from the oven gets crushed under a two-ton volcanic stone, slowly and repetitively, for 24 hours to release all the juices. It’s a labor-intensive process, but the reward is a tequila with unparalleled depth and nuance.

Other producers use shredders or roller mills to speed things up, but we’re committed to the tahona method because it preserves the full, rich flavor of the agave. As our founder says, “The stone yields a more distinctive and nuanced agave flavor and, most people agree, a better tequila.”

Fermentation & Distillation – Crafting the Spirit

Open-Air Fermentation

After crushing, the agave juice—along with the fibers—is transferred to open-air fermentation tanks. Here, wild yeasts from the environment work their magic, converting sugars into alcohol and infusing the spirit with unique flavors and complexity.

Fermentation is as much an art as a science. By allowing natural yeasts to guide the process, we capture the essence of our environment and the agave itself.

Double Distillation in Copper

The fermented mash is then double-distilled in copper pot stills—a method that refines the spirit, removes impurities, and creates a tequila that’s remarkably smooth, pure, and agave-forward.

Copper is essential here; it interacts with the spirit to enhance clarity, aroma, and mouthfeel, resulting in a tequila that’s as clean as it is complex.

Resting and Bottling

For our Blanco expression, the tequila is rested in stainless steel for two months before bottling. This crucial step allows the flavors to meld while preserving the crisp, vibrant agave profile.
